Sweet & Sour Meatballs
2 eggs 1/4 cup milk
1/2 tsp. salt Dash of pepper
Cracker crumbs 1/4 cup diced onion
1 lb. ground beef
Sweet and Sour Sauce:
6 T. brown sugar 3 Tbsp. cornstarch
5 T. vinegar 1-1/2 cup tomato juice
1-1/2 tsp. salt 3/4 cup cold water
1/2 c. chopped onion
Mix eggs, milk, salt, pepper and cracker crumbs; add onion and ground beef. Shape into 1 inch balls. Brown in skillet. Meanwhile in a small sauce pan mix brown sugar and corn starch together; add vinegar, tomato juice and water. Stir until smooth. Add onion and salt; bring to a boil. Remove from heat. Place meatballs in a 9 by 13 inch baking dish; pour sauce over top. Bake 1 hour at 350 degrees. Serve over rice.
