Pot Roast with Potatoes and Carrots

 Prep time: 15 min. Cook time: 2-1/2 hrs.

Yield: 6 servings

 Ingredients:

  • 1 (2lb.) roast
  • 4 medium potatoes
  • 2 cups baby carrots
  • Salt
  • Pepper
  • 1 small onion sliced

Instructions:

  • Put roast in a roaster pan.
  • Scrub potatoes; place potatoes and carrots around roast in pan.
  • Salt and pepper roast; layer onion slices on top.
  • Add 1 in. water to bottom of pan.
  •  Bake at 350 degrees for 2-1/2 hours.
