Pot Roast with Potatoes and Carrots
Prep time: 15 min. Cook time: 2-1/2 hrs.
Yield: 6 servings
Ingredients:
- 1 (2lb.) roast
- 4 medium potatoes
- 2 cups baby carrots
- Salt
- Pepper
- 1 small onion sliced
Instructions:
- Put roast in a roaster pan.
- Scrub potatoes; place potatoes and carrots around roast in pan.
- Salt and pepper roast; layer onion slices on top.
- Add 1 in. water to bottom of pan.
- Bake at 350 degrees for 2-1/2 hours.
