Strawberry Shortcake

 

 

 

1-1/2 cups flour                            3 tsp. baking powder

1/4 tsp. salt                                   1/4 cup shortening

3/4 cup sugar                               2 eggs, beaten

1/2 cup milk

Sift flour, baking powder and salt together. Cream shortening and sugar until light and fluffy. Beat in eggs. Add dry ingredients and milk alternately. Beat until smooth. Pour into two greased and floured cake pans. Bake at 350 degrees for 25 minutes. Cool 10 minutes then turn out onto a cooling rack to finish cooling. Place one layer onto a plate. Cover with sweetened, sliced fresh strawberries. Top with second layer and more strawberries. Top with whipped cream if desired.
