Fruit Pizza
1 tube (16-1/2 oz.) refrigerated sugar cookie dough
1 pkg. (8 oz.) cream cheese, softened
1 container (8 oz.) frozen whipped topping, thawed
1/2 cup powdered sugar
1 tsp. vanilla
1 cup fresh strawberries
1 cup blueberries
1 cup green grapes
1 can (11 oz.) mandarin oranges, drained
1 cup pineapple tidbits
1/2 cup sugar
2 Tbsp. cornstarch
1/2 cup orange juice
1/4 cup pineapple juice
Pat cookie dough into an ungreased cookie sheet. Bake at 350 degrees for 10-12 minutes until golden brown. Cool. In a large bowl cream together cream cheese, powdered sugar and vanilla; fold in whipped topping. Spread over cookie dough. (Hint: cut into serving pieces before adding fruit.) Arrange fruit on top. In a medium sauce pan combine sugar and cornstarch; add orange and pineapple juices. Cook and stir 2 minutes until thickened. Cool; Drizzle over fruit.
